what is the best product to keep the pizza from sticking to the peel and adding a little different texture and flavor to the pizza ? We have a Woodstone gas fired brick oven with infra red deck, fine corn meal burns up and smokes coarse corn meal might be a little too crunchie is a coarse grind semolina or medium grind semolina better ?

I use Bob's Red Mill Semolina flour. It works the best of all the items I use to prevent peel stick. It does not change the taste the way corn meal does. Plus corn meal builds up on the oven surfaces.
