yup. AP flour. AP fed starter. happy 1000 post day

90% bakers and chefs AP
10% KAWWW
15% starter at 100%
60% water
1% (of whole) milk
1.5% fine sea salt
.5% sugar, .5% honey (generic)
2% EVOO. real EVOO not walmart special old stock reserve from two years ago

hit the mixer at 830am, bulk rest for an hour, knead, half hour rest, stretch and fold, hour rest, ball, rest two, stretch and fold, re-ball (repeat twice) rest at counter until 4:15 baked at 550

absolutely mind blowing what that dough process did. it actually snaps like NY crust and still has a delicate soft neo style crumb
