I want to start my own pizza shop bad! What type of oven would be best for a beginner?

Blodgette (Spelling?) is what most Chicgao pizzarias use.

I plan on starting a home town pizza shop, carry out and delivery. It'll be a Ma & PoP pizza shop. I make my own sauce and dough.

I plan on serving new york style pizza ,also my own custom pizza thin crust to thick, up too the customer. The sause will be my trademark. I'm new to this so if you can help me I will gladly take advise. :-\

You'll probably want to use a Baker's Pride or Blodgett deck oven for your shop.

No, I break computers for a living.  However, I have worked in two different pizza places (for just over 4 years total) and consulted for 3 others and been making pizza at home for almost 10 years.

What I really want to do is open a candy store.

Guys, I'm in the Retail business...if you need any advice, let me know. It's tough out there.

The SBA is having problems right now. Congress has not approved their 2004 budget, so they shut down the loan process for a while. Congress floated them a small amount of money for sa7 loans, but it's a real fiasco out there.

I'm going to try another route, I'm going to buy all my equiptment  in the next 2to3 years. I'm going to watch for auctions and close outs. I'm incorporated now under building and repair service. I still have to check out permits and insurance.  ??? There's a pizza shop here that the owner sold to one of his employee's for $6000 cash for everything! Where are these deals when I need them. I'm in a perfect area for a pizza shop, the current shops are terrible. Bad pizza! :-X .
