Zacchary's Pizza
« on: July 23, 2003, 10:03:29 PM »
Has anybody had pizza at Zacchary's in Oakland, CA?  It's Chicago Style stuffed, and it's as good as any in Chicago.  The crust is light and flaky and the insides and sauce are great.  Unfortunately, I am no longer either in Chicago or Oakland.  I would like to make some of this stuff for myself, but I can never get the crust right.  Gourmet Pizza in my current location is Papa John's, so I'm jonesin' for some pizza.

Jonesin' for pizza,

We ate there a month or so ago. It's very good pizza, but unusual. The crust is almost like a biscuit. I enjoyed it and would go again. But, I prefer a lighter dough.

I used to eat it all the time when I lived in the area because it was my wife's favorite.  I recently posted a recipe inspired by Zacchary's.  As you will notice, my recipe has evolved the way a recipe can after years of working with it, enough so that my wife now claims mine is much better.  Let me know what you think if you try it:

Patxi's is seriously close to Giordano's...Zacchary's is great. Patxi's is better.
