Hi, folks, my name is Dave I have cooked a great deal in food service but been in another line of work for 22 yrs but do alot of cooking at home. I make a lot of pizzas latley and doing a poolish to make them. using many recipies on line. I have been doing well but not the way I like it. I bought caputo flour and mix with KA. I come from Italian background but not full only half. So food has been a big deal growing up. Maybe some good measuremnts would help from others who do well would be appreciated.
I'm 59 yrs old I live in SD were not to many do well with pizzas usually the chain pizza places.
I have always been unhappy with them as you all probably are also its fake pizza.
I had a notion if I perfect the way I want it maybe do a trailer system of some kind if anyone has ideas or do it. Have a wood fired system on it.
