In 2011 I took a pizza making class at Pizzeria Ortica in Costa Mesa, California.  http://www.pizzeriaortica.com/
I made a video of the chef demonstrating how to shape a Neapolitan pizza and thought there might be something in there that would interest some folks on this forum. He gives a pretty detailed description of how to shape the pizza and preserve the rim.  He also gives some information on how to turn a pizza in the wood burning oven.  Here's the link:
