I just made one with lime, basil, Knob Creek, and club soda. Excellent.

Pinot Grigio, as usual.  That said, I did run a special a while back that was mojito inspired!  It was called the Havana and had a basil/mint lime pesto, mojito marinated chicken, fresh mozzarella, tomatoes and jalapenos.  It was a pretty popular pizza.  Not one of favorites--I generally favor just cheese or some sort of veggie toppings.

I have pecans that have been soaking in bourbon for 5 months now.  The last dishes I made with them a few weeks ago were wonderful.  One bourbon, one scotch, one beer.

Drain the pecans and toast them lightly--300-325 for 5-10 minutes.  After that, you can make pesto.  It has a wonderful smoky note to it.  Your choice of herbs.  It's great for pizza or pasta.  The pesto is also great over grilled trout.
I've also made oatmeal cookies with them.  One of the best dishes was carmelizing the suckers with some butter, brown sugar and honey and then tossing them into some homemade maple icecream.  And yes, they can be used in a pie.  That's where I got the idea from--I think it was Salpico on SE who mentioned doing a pecan pie with bourbon soaked pecans and well since it sounded like a good idea--I just went in other directions with it.

It started with a bottl of Chilean Shiraz, then some Ron Zapcata Solara 23 rum, then the Knob Creek came out, then the Courvoissier... Ie think thatjs wherfre iM right nowkl.

I had 2 bloody mary's from the tomato juice I drained off a can of Cento San Marzano tomatoes. Nothing goes to waste! :-D

I have had better and I have had worse. This is my local roaster and I forgot to mail order any beans before I ran out.
