A rumtopf (literally translated to rum pot) is a tradition originating in Germany and Denmark. You fill a pot with fresh berries and then cover with rum (some add sugar, but I do not) and let sit for a few months until the fruit is saturated with rum. Then it can be spooned over vanilla ice cream for a rich desert.
I do it a bit differently - I just add fruit and rum and then let it sit for a long time, periodically removing a bit of the liquor to taste, then replacing with more rum. The pot in the pic is nearly 14 years in the making - the strawberries you see are of that age. Tonight I ladled some of the elixir for a tasty nightcap - like nothing else I have tasted. Hints of berries, honey, and tropical fruit on the palate.
The color is entirely from the fruit and the aging process - whenever I add rum (every couple of years or so), it is completely colorless.
