Here the recipe ingredients in weight and %

flour   499.1g      100%
water   347.9g      69.70%
yeast   3.5g      0.70%
garlic   2.3g      0.46%
salt   10.8g      2.16%
oil   8.7g      1.74%

27g off water   347.9g to hydrate yeast
and 36g of additional flour while kneeding, I used only about half it yesterday,

I get it form Phoenicia Specialty Foods  their address is 12141 Westheimer Road, Houston, TX . It is worth visiting if you ever on that side of town

I went there yesterday morning, I bought aleppo pepper (never had it before) , french feta, blue cheese, and lots of other stuff

I've been there - awesome store - they have one downtown now too. It's a great place to buy cured meats and hard cheeses - things like Rarmigiano-Reggiano, Grana Padano, and Pecorino Romano are something like half the cost/lb vs. HEB.

I have not been to the one in downtown ( next to discovery green), their cold cuts and cheeses are definetly cheaper than anywhere else.

My wife works downtown, she had lunch there yesterday... I have a friend who lives in that building, I have not visited him for over a year. If the weather is nice, we may take the kids to discovery green, visit my friend and checkout the store. 3 birds in one stone.

If I want to double my recipe, should I double yeast amount or should I use less?

I think it is safe to double it.

The one downtown is quite a bit more upscale with only a tiny fraction of the product offering. Definitely worth a visit if you are in the area.
