I didn't set out deliberately to combine these toppings - they were just what was handy and needing to be used soon. It was sensational. A second pie used jalapeño cheddar instead of havarti. I preferred the havarti, but was overruled.

Wow. Great combo. I have never tasted bacon jam, but can imagine the sweet, salty, fatty bite it must have.

And such a beautiful crust as well - gentle leoparding and extraordinarily puffy.

Thanks, John. Bacon jam is especially good on burgers. One of my secret weapons. If anyone is interested, I use more or less the Marta Stewart recipe - google it.

That is the timing I usually get, but the charring is much more pronounced on my pies. Yours exhibits the characteristics I am striving for in a bake, and is very close to the ones Marco posted recently:

Beautiful pie Bill. I have not tried havarti on a pizza. I need to.

I like to make bacon jam/chutney/etc. In a pinch, you can make a really simple version with some good red jalapeno jam and add a bunch of crispy bacon and caramelized onions and let it cook slowly until the bacon softens.

This pie was topped with jalapeno jack cheese and a sweet, spicy, smoky chutney of applewood smoked bacon, caramelized onions, hatch chilies, and red bell peppers that were roasted over a raging pecan-wood fire. Eaten al libretto, it’s like a giant stuffed jalapeno exploding with creamy cheese and salty, smoky bacon, all dipped in caramel-y rich, sweet roasted red pepper sauce.

Now that the waters are safe again...

Lovely pizza, Bill.  Even being a vegetarian doesn't stop me from admiring it, and the perfect crust looks so tender and light!!  I find Havarti a bit rich for eating plain, but it does have places that it shines, and I suspect this is one of them.
