Recommendations welcome

I have made an edible pie after some not so good attempts and welcome any recommendations. I used a variation on Pete-zza's Roadmap to Tom's Lehman's recipe.  I used a 3 day cold ferment and a baking stone (preheated for 30 min) in an electric oven at 500 degrees (can go up to 550).  Two things I noticed, the dough had a slight pretzel flavor or after taste?  And my oven has a convection option.  Would you recommend using the convection when baking the pie?  Sorry about the picture quality. I'm sure you can get lots of advice here, but usually more information is needed. Can you post the actual recipe that you used? How long did you bake it? What size was the pizza?

I'm not sure what you mean by a pretzel taste? Was it too bread-like?

The texture kind of reminds me of a pretzel. You need to post your formula. Your picture is blurry but it looks like you might be killing off your yeast.
