White Sauce = Whipping Cream?

I visited a pizza place last week and ordered a pizza with white sauce. Surprisingly, I saw their recipe was simply to pour whipping cream on the pizza without adding anything else to the sauce. It wasn't memorable, but wasn't bad either.

Has anyone seen this done before?  And, does anyone have any good white sauce recipes that are easy and don't involve adding cheese?

does anyone have any good white sauce recipes that are easy and don't involve adding cheese?

In this old thread there is plenty of discussion on this, including a link to my go-to white sauce for smoked chicken pizza.

I will often use Alfredo from a jar but usually add a forkful of minced garlic to it first.

Here's where I started adding heavy cream to some pies after reading CKs post and Craig's response to it. http://www.pizzamaking.com/forum/index.php/topic,29303.msg300845.html#msg300845 I did it a little different by making a cultured cream using a couple cups of cream  and adding 3-4 tbsp of buttermilk and letting it set overnite. It's gets a wonderful almost barny taste to it, like fresh raw milk, then drizzle it thru the top of the pie with a squirt bottle so it blends with the cheese as it melts.....OMG, unctuous, creamy, rich................:drool: :drool:.........so good. Not something for every pie, but the right one, once in awhile, BIG YES!!!

Here is a my favorite white sauce. 

4 tbl extra virgin olive oil
1 cup heavy cream
1 tsp dried thyme
1/2 large onion, fine chopped
4 cloves garlic minced
Salt and pepper to taste.  Sea or kosher.  Fresh cracked pepper is best.  Use a pinch or 2 of salt and a pinch of pepper.

Heat sauce pan, add olive oil to medium heat.  Add in onion and cook till translucent about 4 to 5 minutes. Then add garlic and cook another minute, do not brown garlic.  Add the heavy cream and stir slowly, and lower heat to low.  Occasionally stir and cream will thicken, about 3-4 minutes.  Remove from heat, add thyme and stir in.  Let cool and put in fridge for 1 hour.  Remove and let warm up then put on pizza , makes 2 12" pizza...

I don't make white "sauce" for my pizza, I either use creme fraiche, or mascarpone, just spread it on and top with other ingredients.

If you go to the search page at http://www.pizzamaking.com/forum/index.php?action=search, enter the words "white pizza" (without the quotes) in the search box, click on Search in topics subjects only, and hit the Search button, you should get a lot of hits to look at. However, I think that you will find that most recipes call for using a cheese of some sort such as mozzarella, cream cheese, ricotta or specialty cheeses like gorgonzola or blue cheese. But here are a couple of examples of white pizza sauces that do not include cheese of any kind:
