MY PIZZA VIDEO

Shot this video the other day!  Firing up our Forno Bravo Premio 2G100 and cooked a pizza in roughly a minute and a half!

I am indeed in TX, lots of Texas beer caps all over that oven.  The whole dome is mosaic bottle tops.

I've been admiring your threads, your pies look ridiculous.  I'm going to experiment with a warm(er) rise like you described.  I've only done the cold rise dough a la Jeff Varasano for 5-7 days in the fridge.
