To me, pizza is simple food - peasant food as it is often described in Naples - even if you ramp up the toppings. That it can be so simple and yet so difficult at the same time is what draws me to pizza.
I'm the exact opposite of Brian..... Because of Craig, Jon, and a few others I've started enjoying foods that none of my friends and family will eat (heart, ears, liver, etc. LOL). Oh, and truffle oil. No one I know likes the pungency of it, but I guess some would consider that a snobby food.
But yeah, the simple yet hard aspect of baking was one of the reasons I was drawn to bread and eventually pizza too. Just the smallest of changes makes all the difference in the end, and the whole trip getting to your ideal is what makes it so enjoyable. There is always something you could improve upon.
BTW, this is one of those instances where something that isn't pizza is being called pizza. Without a flour based crust, this is just a cheese topped meat patty.
