Mario still got game.

I can't figure out how he (and a lot of others I see in videos) seem to get away with using so much bench flour. When I used flour, before going to semolina, if I used that much it would have ended up all stuck to the cornice and would have tasted bad and inhibited browning. The pros don't seem to have that problem.

He also goes pretty light on the sauce.
