Oh How I miss thee There really is no Comparison to the way the Earthstone Bakes compared to the Mobile. With the Bakers tiles and 4" concrete and a nice 4 hour heat up the oven performed Beautifully, after I wiped the cob webs from the door
The dough making room/ Garage was spot on 62-66 so I did 18hr bulk rise and about 12 hrs in the fridge and then 5 hours to come to temp. Not often I get time to do a full on 3-4 hours heat up and not matter high the dome this makes a very positive impact on the finished dough/pizza. Floor was right around 825 all night did 35 pies for friends and family yes they like meat !
Back to the Mobile next weekend ! Not gonna complain as long as I am making pizza I am smiling
