First cold ferment

This it's my first attempt at a 24hr cold ferment. I never new until I found this sight that there was so much to a "simple" pizza. I used Jackie Trans volume measurement recipe as my digital scale has not arrived yet. I used the king arthur bread flour like this.

 • Bread Flour 2.75 cups (~378gm) 100%
 • Water 1 cup 1T (~232gm) 61% hydration ratio
 • Table salt 1 tsp (~6gm) 1.58%
 • ADY/IDY 1 tsp (~4gm) 1%
• Sugar 1 tsp (~5gm) 1.3% •
Oil 1 tsp (~4.3gm) 1.1%
• Total 629.3gm minus 5% bowl residue = 598gm or 299gm per ball.

550° stone pre heated for one hour. First pizza was 7 min....a little to long for me. The second was 5 1/2 min and came out perfect.

I have to say this was the best pizza I have ever made at home. It was foldable the rim was crispy but soft and airy.

Thanks Bob. Soon as I seen that pic I knew it had to be my avatar. It represents what I love to do, spending time with the family and the dog camping, kicked back and enjoying life. If I could just figure out how to put a pizza oven over a campfire I would be all set . I checked out the airsteam as well, very cool. Someday I hope to have a WFO in the back yard.

I think I just found my winter project, thanks Bob. Bert has a great idea for the gas grill thats for sure. I think I have a few ideas for over the campfire . But thats another thread for another day.

It was VERY tender! But nice and crispy on the outside. This is the type of pizza I have been striving for. I'm so glad I found this sight. The first recipe I tried came out perfect. My digital scale is in the mail and I can't wait to try some of the other recipes from here.

You made an excellent first choice....Jackie Tran produces some of the finest recipes on this site.
