Missing My Earthstone

Oh How I miss thee  There really is no Comparison to the way the Earthstone Bakes compared to the Mobile. With the Bakers tiles and 4" concrete and a nice 4 hour heat up the oven performed Beautifully, after I wiped the cob webs from the door  :-D
The dough making room/ Garage was spot on 62-66 so I did 18hr bulk rise and about 12 hrs in the fridge and then 5 hours  to come to temp. Not often I get time to do a full on 3-4 hours heat up and not matter high the dome this makes a very positive impact on the finished dough/pizza. Floor was right around 825 all night did 35 pies for friends and family yes they like meat !
Back to the Mobile next weekend ! Not gonna complain as long as I am making  pizza I am smiling  ;D

Thanks Steve! Wish that oven could travel with me ! A few Pesto and a puffy Cornicione  to finish up the balance of the end of season Basil fall has arrived Had my helper ther to train on the stretch with no pressure he was catching on after about 10 he did this veggie pie 100% ! there is hope !

Beautiful pies John. That pesto is calling to me. 35 pies! Isn't it amazing how many people come out of the woodwork to taste Neapolitan pizza? It's like crack.

I love the cupped pepperonis and I gotta say that crust looks like my wife's leopard print bikini.  Sexy!  Edible!  Aargh! :-D
I'd rather eat one good meal a day than 3 squares of garbage.
