Bob,
The King Arthur Sir Galahad flour is the same as the retail level King Arthur All-Purpose flour. The Sir Galahad flour is sold to professionals in the large bags.

Yes, it is what I use. I get it in 50 lb bags as well. It is a great flour with very consistent results. Develops great flavors when fermented.
