Polo1523,

So-called emergency doughs are intended to be made and used within a few hours. Examples are given in the compilation at http://www.pizzamaking.com/forum/index.php/topic,8297.msg71576.html#msg71576. There are "same day" dough recipes that can be used to make doughs that can be used after many hours, say, 8 hours or more, but the above referenced compilation does not apply to such doughs.

My favorite same day NY style dough is the JerryMac Lehmann style found at http://www.pizzamaking.com/forum/index.php?PHPSESSID=531ff402726f97d932f386517f6583e9&/topic,5851.msg49940.html#msg49940

Very good for a same day dough.

Try resizing them 800x600.
I'd rather eat one good meal a day than 3 squares of garbage.

Sorry for the picture quality but I don't know how to resize it, so I just print screen and save it

Oh and the recipy was the one you suggested bfguilford I follow it exactly as you said.

Nice crumb structure. If you want more top browning, you could try to turn your broiler on for a minute or two at the end.
