Deconstructed Pies

Here's a few pic's of last weekend's pies.
All were sauceless, using instead ,strips of Cento San Marzanos.
Mushroom, Anchovy, and a 3 part pie with mushroom, pancetta and garlicky spinach.
All 175 gram Caputo

Very interesting. I have seen this done with cherry tomatoes that have been slightly crushed. Cool idea.
