So I am on Vacation and wanted to hit Paulies Coal Fired here in Hilton Head. This is the Uncle of A few of the Trainees I had met at Amano  who are opening in Morristown NJ Meatballs and Neapolitan pizza ( still not open)
Anyway I was excited for some good coal fired and honestly let down.
Wed night ordered the meatballs, Chopped salad and 2 pies Margheriata and Pepperoni total  $69 dollars !!
Meatballs were Very Very good , Chopped salad  Nothing great at all.
Pizza No Taste to dough and quite undercooked
 I liked the concept 2 large earthstone ovens but buried behind the counter top and cornmeal everywhere!  
I went and spoke to the pizziaolo after We ordered with my standard few simple questions. After seeing they were running wood ? I asked whats up said they used to use coal no more .

So what the temp of the oven ? - 700 degrees  :'(

Do you  make the dough  - yes  we make it in the morning   :'(


What  kind of flour ? - all purpose - you mean a alltrumps? yes  didnt have a clue. really .
Heres a few pics of the undercooked Margherita? The pie was gummmy little flavor, facct is I will never go back to find out sorry guys . Shows many people just dont know better. this was no where near what I have envisioned as a grimaldis, tottonos,brooklynn  coal fired pies Crank up that oven Please !! Maybe its better when Jamming in the summer but I will never find out cus i wont be back

its too bad.   that oven can put out AMAZING pies if they are done right.

Thanks John for TOFTT.  We have a connference/trade show every 3 years in Hilton Head.  No need for me to visit this place unless they step up their game.

Gene There is another place down the island that does a really nice thin crust ny style in a WFO totally different but cooked properly and not "coal fired " ? I will get the name its in a strip mall and has great food as well as pizza that's one not to miss I will get the name

@ Scottr yeah crying shame I know you are a coal fired specialist you really need to give this guy a call !
What's up with those dough balls they are for a 16"

This guy won best at 2011 pizza expo for his traditional pie too! So not there not good

thanks for saying that john.   I love that oven because it can put out 3.5 minute pies all day that are crispy because of the dry atmosphere, but also tender and soft inside because you can use such a wet dough.  That speed is right at the edge where you can still use normal cheese if you get the right brand, or you can go with fresh mozzarella and its of course great as well.    Theres no reason why that pizza shouldn't have been excellent...other than operator error!

So after ordering the meatballs I said lets wait cus it only taked a few minutes and I didnt want pies on topof appys! I aske the server wel How long does it take to cook a pie his answer Oh around 15 minutes !! So should really w=edumacate the staff as well when I spoke to the pizziaolo he said Oh no around 5 minutes so.... no  clue. and no owner or manager around  that knew anything ?? No wonder
Delicioius Seafood tonight  local wahoo .... But now whenever I drive by this Coal fired? pizza I will allways wonder  ? will probably make it at those Marging ( $16.00 -16" ) as long as people stop in to try
