What about the most important thing, like TASTE??? I have often found that Fresh mozzarella tastes very bland and without much flavor. Therefore, when i use it, I mix just a very small amount of Fresh Mozzarella with mostly Whole milk Mozzarella. But then again, I am using a home oven and not a wood fire oven. Perhaps cheese flavor is not the most important thing on this style of pizza??? However, your pies still look good. I would not turn them down.
Once again, how much flavor do you get out of your fresh mozzarella??? I would like to see your response on this? Thanks
