So I am on Vacation and wanted to hit Paulies Coal Fired here in Hilton Head. This is the Uncle of A few of the Trainees I had met at Amano who are opening in Morristown NJ Meatballs and Neapolitan pizza ( still not open)
Anyway I was excited for some good coal fired and honestly let down.
Wed night ordered the meatballs, Chopped salad and 2 pies Margheriata and Pepperoni total $69 dollars !!
Meatballs were Very Very good , Chopped salad Nothing great at all.
Pizza No Taste to dough and quite undercooked
I liked the concept 2 large earthstone ovens but buried behind the counter top and cornmeal everywhere!
I went and spoke to the pizziaolo after We ordered with my standard few simple questions. After seeing they were running wood ? I asked whats up said they used to use coal no more .
So what the temp of the oven ? - 700 degrees

Do you make the dough - yes we make it in the morning

What kind of flour ? - all purpose - you mean a alltrumps? yes didnt have a clue. really .
Heres a few pics of the undercooked Margherita? The pie was gummmy little flavor, facct is I will never go back to find out sorry guys . Shows many people just dont know better. this was no where near what I have envisioned as a grimaldis, tottonos,brooklynn coal fired pies Crank up that oven Please !! Maybe its better when Jamming in the summer but I will never find out cus i wont be back
