Saturday night was an epic pizzafest at Tom's (Tscarborough) house in Austin featuring everything from NP to Detroit style. I have no idea how many pies were baked. There was something in the wine that Gene and Josh brought that made me lose count. Thanks again to Tom for sharing his home with us.

Here is the first pie baked in Gene's oven:

Josh brought all sorts of tomatoes and fresh cheese curds. Here he is making some beautiful mozz and me attempting to do so. It was great to learn how it is done, and good grief was it good.

Gene did much of the prep work and made some great orange sherbert. I made coconut ice cream, but I'm not sure anyone took a picture, so maybe it didn't happen?

That forklift in the background saw action Sunday morning.

These are the only non-Neapolitan pies I've ever tried that just completely blew me away with how good they are. OK Scott, maybe a couple NY pies too.

Loading the oven got a little dicey - the back wheel of the forklift came off the ground a couple times, but Tom got the job done.

You know I want to be there WOW bout all I can muster up right now I know if type too much power will probably go out ! Blowin like stink House is shaking but the Earthstone hasnt moved an inch

Thank you all for the well wishes. The forum and many of you have cut down the learning curve exponentially. I realize that a person still needs to work for their food (pizza), but without you great pizza (all kinds) cooks, it could take 10 years instead of 2 or 3. Or, a VPN class.

Awesome stuff! You guys certainly do it right! Those square pies look ridiculously good, didn't look like you had much of a learning curve with the new WFO. Congrats all around. If you have a chance could/would you share the recipe/process for the square pies? Also, did you build or buy the WFO.

The square pies were from one of the Via 313 brothers. http://via313.com/ He didn't share alot about how they were made.
