The pizza tour has hit Houston and Austin, it needs to go to SA, Dallas, and CC too.

I fired the oven last nite and cleared the walls and dome.  Then again tonight.  Rain clouds and lightening 15 miles west of me, right now.  I have no idea what to do, tarp the dome?  I still haven't filled in the little blow hole that tom left in the topp of the dome (don't know if I reported it) to get the insulation dry in the walls and dome., but I do have a piece of foil over it.

I did get a new IR thermo today.  So I should not nuke the dough as last time. (if that is what the problem was) The starter was young, but not hoochey like last time, so time will tell.

Time to ball the dough balls from bulk and put them back to rest until tomorrow. Isn't this whole pizza thing just a hoot?

I've got to blame the starter, again.  I used it on the opposite end of the spectrum that Craig suggest (mine was on the way up, instead of down)  The oven wasn't to hot, maybe even a hundred dergees low.  I'll just have to try it all again, really I don't mind.
