The rest of the chops and morels.....AMAZING taste with the morels. They had so much umami flavor coming thru Rosie said she had a hard time believing I did not add soy sauce to it, even I had a hard time believing it!! simply fried with some onions, garlic a just a bit of green pepper and only added salt and fresh cracked pepper they had a very strong soy flavor in front. I'll be hitting the woods looking for more tomorrow

Gorgeous!  Wish I had the cohones to forage for mushrooms.  Ramps are my thing to forage for now, and sadly their season is now over.  I will be heading to a local mushroom farm that I just discovered and see what they have to choose from, however!

Morels are the kind of mushrooms a blind man could pick with confidence, even better, in the fall are the maitaki/hen of the woods....JUST AWESOME!!!

I kinda disagree on that one. It would be fairly easy for a novice to mistake a false morel (Gyromitra) for a real one if they didn't know how to differentiate. Some of them can be pretty darn convincing unless you slice them open. Can't just go on the attachment of the cap/stipe since there edible half-free morels out there.

Well, I'm glad you said 'kind of' disagree and 'novice' but an educated blind man could still pick the good ones from the bad :-D Actually in 40 some years of picking I've only come across a few and one of those times it was in the lilacs in my back yard, a very perverse looking thing it was too AND slimy. http://www.healthy-life.narod.ru/mus/me14.jpg At any rate, not a lot of false morels to be found and they are usually more of a solid core where morels are hollow. Yes, they are out there, but, remain probably THE safest mushroom to hunt for novices and pros alike. BUT, "when in doubt, throw it out".
Also like I said, come fall, look for the Maitake/Hen Of The Woods, BEST mushroom in the woods!! Come apart like string cheese and have the texture of meat!!! Biggest ones I've found were 15 and 25 pounds and will grow up to 40-50 pounds. Another pretty safe one to hunt without the need for doing spore prints and such.
PS...most all wild mushrooms should be cooked before eating and alcohol consumption should be kept to a minimum or nil. Eat a bunch and get drunk and you and everyone else will find out why.....EXTREME GI symptoms resulting in a lot of very bad farting. Hit me in the middle of a pool tourney once, I was not popular in the bar when they finally pinned it on me, I blamed the mushrooms, but it was the truth.....I still took 1st -place and 500 bucks:-X :P :-D

Yum! Most folks don't know that is a super combination .  We have a local awesome woman that serves this and don't quote me but she may be the inventor of the dish. The old gal is a bit of a celebrity chef in her own right.  :chef:

Lucky man!

And great chef! :chef:

Ever try adding some diced chourico  or linguica in there? Seems like it would compliment the Vinho verde nicely!
