A fresh burrata, heirloom tomato and arugula salad finished with EVOO, balsamic, salt and pepper. This simple salad is amazing.

Looks awesome--my kind of salad!

Chicken vegetable soup and homemade sourdough with a salad are on the menu for tonight.  I just finished experimenting with "mozzarella" made with coconut milk.  I'll try a bit of that on the salad and also on the bread.  I'm quite curious as to how it will turn out after cooling, and eating at room temp, chilled and also melted.

I saw your post asking about but I had no experiences to contribute. I am interested to hear how it turns out. I hope its good.

The flavor isn't bad on the coconut mozz, but the texture isn't where I would like it.  I'm going to have to play around with the thickening agents to get it where I'd like to have it.  It's an interesting experiment--I have made a cashew ricotta that is quite good.  While I don't have any vegan or lactose free people, I was interested in developing some pies for a place I worked at, so they would have those options.

Coconut "mozzarella" on homemade sourdough. Not bad for a first try. Texture is off.

Lucky man!

And great chef! :chef:

Ever try adding some diced chourico  or linguica in there? Seems like it would compliment the Vinho verde nicely!

I do.  My office is in a town with a large Portuguese population and they frequently combine clams and pork.

I forgot about this thread yesterday. This is what I had for breakfast yesterday morning. Oreo O’s Pancakes with Cookies & Creme Protein Frosting. BTW I'm looking into buying a waffle maker, being on Instagram and see what people are making is driving me crazy, so I want to get one. Do you guys recommend any? Only requirement is I want one that makes square waffles and don't want to spend more then $75 if possible.

There is actually only 8.9g sugar in the Peanut Butter one and 5.9g in the Chocolate one.

There called Mug Cakes. They are incredibly fast and easy to make. This is how I made the chocolate one and the one I made today was the same minus the cocoa powder. http://instagram.com/p/a8XWM5vYbR/

Glad you're lovin' those curds!  I just love that golden color to them.  I'm just about to grill some chicken that has been marinating in black garlic, fresh oregano, fine bush leaf basil, sherry vinegar and spicy chile olive oil.  There's also going to be some crispy sauteed polenta love going on along with crusty bread and a salad.  You know I have to have those greens going on, DMC! :-D
