A beer steamed egg seasoned with Aleppo over lemon dressed baby greens with an Aleppo and parm encrusted polenta cake, finished with a smoked chili and some of the oil. Big thanks to a certain someone in Houston!

Candied yams. It's one of my wife's childhood "must have" dinners. Ham steak must have candied yams/sweet potatoes, cottage cheese, and scallions. W/o all of these items, critical mass is not achieved and dinner will be something else.  :-D

I'm not a Southerner so I've been deprived of some great cooking. I never had Biscuits & Sausage Gravy until after the Signal Corps, I dated a Kentucky gal and we drove down to meet her grandmother once. Had to drive through Hazard KY (that's Dukes of Hazard, Hazard) to get to her place. The next morning the grandmother served up a country breakfast like I never had before. Biscuits & Sausage Gravy has been my downfall ever since. OMG, I love that stuff.
That's the long way of saying, no grits. I've never developed a taste for it (or is it "them").   :)

The Aleppo looks ground on your sardines and bacon, did you buy it that way or are you grinding it for better coverage or flavor?

Yup, grinding it on with a little sprinkling of sugar too. Bake on a foil lined sheet pan at 300 and perfect bacon every time! And, as you know, also a Yankee and love grits! :-D

That bacon looks great! I am so doing that next time.
I do my bacon in the oven, too. 400 works great and a bit quicker.

I used to do 400 but dropped to 300 a little while back and find it cooks more even and renders a little better without scorching the grease that I save

Oh, and fried in a white hot cast iron skillet with some of that Aleppo bacon grease to keep it REAL.... :-D :drool:
