re: cured beef - I love good carne salata but yes, it doesn't receive as much "foodie" attention as it's porcine relatives.
Dried Beef (think SOTS) is cured as a roast and then thinly sliced. Back where I grew up in Iowa, there was a small town locker that made weekly batches of Dried Beef out of whole Round roasts. Sale day was Wednesday, and if you weren't here by 10a.m., it was gone. Good stuff, for sandwiches as well as SOTS
Amore, is that the same as SO(a)S? Like, US Army meal?
Crawfish and Zatarans dirty rice. The rice was undercooked, although I nearly doubled the suggested cooking time.
