:chef:

2C flour, 1Tbs baking powder, 1tsp salt, 2eggs, 1cup buttermilk. Mix everything together and spoon onto the chicken mixture bring to a simmer, cover and cook 10 or so minutes. Despite how they may look, they're very light.

ETA: I think I got the recipe off food network quite a few yrs ago. Not sure who's since I have it memorized now.
Alriiight! Thank you Jeff... 8)

This is what I had for dinner last evening.  Out of that dinner what I thought was the best was the white sweet corn.  I havenít had good white sweet corn since late last summer.  I was surprised that the white corn I purchased at Harris Teeter was so good.

Norma,

That looks very tasty! Funny you should mention the corn. We just had sweet corn yesterday also and it was surprisingly good. We don't usually buy fresh corn this time of year because it is usually lousy, but this stuff looked so good in the store that I couldn't pass it up.

We are usually spoiled around here during harvest time because to the West and South we are surrounded by corn. It is so plentiful and cheap at that time that we usually eat it several days a week. Nothing like corn that was cut the same day that you eat it.

Corn is always good! :)
It's an Earth food. They are called Swedish meatballs. It's a strange thing, but every sentient race has its own version of these Swedish meatballs! I suspect it's one of those great universal mysteries which will either never be explained, or which would drive you mad if you ever learned the truth.

Don,

That is funny that you also had sweet corn yesterday and it was also surprisingly good.  You are somewhat like I am in that I donít usually trust that sweet corn will be good this time of year.

We are also spoiled in our area are because we have so many farmers that grow sweet corn, but the growing season for sweet corn is not long enough for me.

Trinity,

I also like corn a lot, but don't like yellow corn.   :-D

Had some leftover rotisserie chicken that I made into creamed chicken gravy with a little onion and garlic and put over a couple biscuits with a nice runny over easy egg on top, lots of fresh cracked pepper.....just perfect comfort food!!

Steve,

Nice looking stack there!

What's your ischia recipe? How much do you put in per batch so that you appreciate the flavor of the culture?

Thanks!

Thanks John,
I must say, that these were probably the best pancakes I've ever tasted, but I can't say what, if any particular flavor was imparted by the culture. Maybe it was the syrup. ;)
Anyway, my normal morning routine includes feeding my starter, which generally means discarding a half to 3/4 cup. So, in my typically unscientific fashion, I simply added this to my favorite batter recipe, which is an old secret that nobody knows except me and some old lady named Betty Crocker. :-D   I simply mixed it in and made pancakes. I didn't wait or let it rise or anything, but I might try that one of these days.
Generally enough to serve 2, but yesterday it only served 1  :-D
1 cup AP flour ( I like unbleached Ceresota. That's also what I use to feed my starter)
1 cup milk
2 eggs
3/4 cup veg. oil
3/4 cup Ischia
3t baking powder
1T sugar
1t salt

BTW, if you haven't already seen it, here's an old thread on pancakes from a while back. http://www.pizzamaking.com/forum/index.php/topic,18773.0.html

Steve,

Thanks for that! I will try to sneak some of that into the next batch of pancackes and/or waffles I make!

I appreciate you (and Betty C's :-D) willingness to share.
