Looks great, especially the rice. Very nice and separated, what kind of rice was it and how was it cooked. I love rice and my 3 tops are jasmine, basmati and MN/WI "wild grown" wild rice. The cultivated is ok in a pinch, but the real stuff is untouchable.

Jasmine rice in a pot on the stove.  I like Japanese short grain also but I've run out :P

sunny side up eggs (one was a double yolker), smoked pulled pork, brussel sprouts and some pickled japs with a piece of toast, lots of pepper!

No, it's half oatmeal and half Bob's Red Mill Pancake mix. It's the cinnamon that's probably making it look like that. 9 egg whites in the omelet and 120g of blueberries in the pancakes. That spread on top of the pancakes is Trader Joe's Cookie Butter. If you guys haven't tried it before, you should. It's so good, tastes like gingerbread.

They were Quaker Old Fashion. I put them in the small blender cup attachment and blended them dry to as fine as I could. Then added them to the mix. I used oatmeal because if I used the full serving size(was going to use 3 servings) of the pancake mix alone I would have went over my daily carb intake. So the oatmeal was a happy medium and worked very well.

These were the measurements.

60g Bob's Red Mill Butter Milk Pancake & Waffle Mix
40g Oatmeal
120g Unsweetened Vanilla Almond Milk
1 whole egg
1 egg white
1tsp vanilla
1tsp cinnamon
30g pineapple puree
12g Sugar in the Raw
Added a pinch of baking powder since there was already some in the pancake mix.

Mixed them just till it was incorporated and let rest for a few minutes.

I know no one cares about this but here were the macros for this meal. I'm at 240g carbs a day and if I used the amount of mix that was needed the carbs would have been around 160-170g.
Calories: 827.7
Protein: 54.9
Carbs: 113.8g
Fat: 17.5 g
Fiber: 15.1
Sugar: 25.1
Sodium: 1263.7

I sure ate enough today.  I started out with Greek yogurt and a banana at home and then went to the Car, Truck and Flea Market and had an egg and bacon sandwich, an ice cream cone and a cheese steak.  My daughter then took me out to dinner for Mother's Day.
