I combined a cooking method from Cook's Country (Slow Cooker Red Beans and Rice) and the seasonings from a food.com recipe (Crescent City Red Beans and Rice) and I had no Creole seasoning so I made (The Best Creole/Cajun Seasoning Mix) also from food.com.
I'm pretty organized with my recipes so after I combine all this into one recipe I'll post it on my "Blackstone Oven Pizzas & Jibber-Jabber" thread so I won't mess up Jon's thread with all the recipe stuff.
Btw, the dish wasn't exactly authentic, I had some stuff to use up so the thin slices of sausage are Chorizo, the half moon slices are andouille. I liked that better than my wife did but she still ate a big bowl of it. I was very happy with how the dish turned out. Another btw, I'm less interested in "authenticity" than good flavor, just so you know.  :)

A big ol' dinner salad. Probably not quite as low calorie as I'd intended before adding turkey breast, bacon, eggs, although the veggies were good.

Fusilli gigante with meat sauce, parm and lots of calabrian chilis. I think I went over a year without making red sauce and pasta recently due to burn out. That helped get the craving back somewhat. Tasty stuff.
Back to being a civilian pizza maker only.

Breakfast "Sardines In Spicy Tomato Sauce", some extra Aleppo and saltines. Then down for a nap in a couple hours before my 6 nite stretch at the hospital!

Breakfast "Sardines In Spicy Tomato Sauce", some extra Aleppo and saltines.

I've heard of salt on everything, but Aleppo?? Just kidding, I like chilli peppers, and I bet it was a good combo.  Sardines, kippered snacks, smoked oysters - all in a can, good eats in small packages ;)

Some EXCELLENT Lebanese Flatbread with Tabbouleh and WONDERFUL garlic sauce that a patient's foster mom brought into the ICU. I am a freaking walking GARLIC BOMB right now, OMG is this stuff soooo good. Very authentic. In a little while my grilled pastrami Reuben with pickled japs mixed in the sauerkraut, provolone and some Dijon horseradish mustard to dip :drool:

I tried to thaw a ribeye overnight in the 'fridge but it was still pretty hard by 1PM today so I laid it on a big cast iron pan to speed up the thawing. That worked just fine. Served it up with a nice salad and a baked potato the size of my foot. Cut some chives from a pot on the patio for the potato (ah...livin' off the land). Man, these Costco steaks are great, but they're even better when thrown into a 1000 BS oven.

I used Costco's Kirkland Steak Seasoning, I love that stuff! I just coat the steaks with grape seed oil and cover liberally with the seasoning. They taste wonderful. I may try some of the mesquite rub just for variety, though.
