I made one yesterday with ricotta and feda. What's your opinion?

I make a pizza with spinach and feta cheese.  I saute the spinach with some red onions and a little garlic (maybe a squeeze of lemon), cover with the Feta and bake.  Sometimes I'll put a little mozz on just because the feta doesn't melt well.  Delicious pizza.

Do you mean Feta or Feda? Never heard of feda but know and like feta but never made a pizza with it.

I often do pies with feta and mozzerella/provalone on top of that. I like that sharp funkiness of the feta. The rest of my pie eaters are getting used to it and actually ask for it and miss it when I don't use it sometimes :-D

My version of a "greek pizza":  garlic alfredo sauce mixed with ranch, chopped onions, light feta/blue cheese/gorgonzola, deli sliced provolone to cover, then black olives and diced cucumber with sweet red pepper rings.  Top with shredded fresh arugula postbake.  Mediterranean spice mix - not sure what's in it, lemon zest, sea salt, other stuff.

Feta, Blue and Gorgonzola : best used in moderation, otherwise they overpower everything else.

I'd rather eat one good meal a day than 3 squares of garbage.

Oooh, Gorgonzola, apple slices and onions with a little mozzarella and provolone and finish with some good fruity olive oil and serve.....you'll like that one I promise. Or if you don't like the Gorgonzola the feta would be good too!! Great hors d'oeuvres before a dinner like today :chef:
