Norma, they taste completely different than anything cooked in the kitchen. Even when using the same exact dough. They taste very much like a 00 NP. It's gotta be the oven.

I had some dough left over from Friday. Two day room temp and another two days in the garage, 45 degrees or so.

That was a good question you asked Steve about the taste difference of his NY pies that are not cooked in the home oven. I'm glad you thought to ask him that Norma.

No Bob. These all have Grande fresh fiore di latte. The white pies also have some smoked gouda.

Norma, I wanted to invite you over tonight but Sue says the house is too messy for company. Sorry. I know you would have been happy just staying in the trailer. I have 9 neapolitan doughs leftover too. I'm not sure I'll get a chance to use them. I'm sure the window of opportunity is about to close on them.

I would have been happy to stay in the trailer, but that is okay. Try to freeze the Neapolitan doughs if you don't use them tonight.

Steve invited me to his home tonight for some bakes of leftover dough balls he had from yesterday. One was a NY style pizza. Steve was trying a little different formulation for his Neapolitan pizzas and I thought those sourdough pizzas were very light and moist in the rim. The one pizza he grated orange zests on the freshly baked pizza. I really liked that citrus taste.
