I generally like to add a spice on top of my cooked pizza. I always taste my pie without the addition of the spice, just to see if I cooked a tasty pizza, but then I add what I like, a bit of heat with taste.
Most recently if have gone with a 50/50, volume mix.
My local spice shop, Savory , only carries flake Aleppo Red Pepper Flakes, crushed. I like the taste, but the heat is lacking. So I decided to ad ground De Arbol Chiles, which I could only buy whole. No problem . I put the De Arbol Chiles in my spice grinder, coffee grinder, and ground till flaky. I then mixed equal weights with the Aleppo flakes. The results are a good tasting, mild to mod heat spice that dresses the cooked pizza nicely.
