eagle yeast wet fresh

just went to russo brand food and market in wyomissing pa and got a 2lbs block of "Eagle yeast/wet/fresh" yeast. and a 50 lbs bag of napolo flour 00 high gluten. how do i enter the yeast into the calculater being that its wet , fresh yeast ? any recipes already done with this yeast that i can see?

It's cake yeast (CY). If you use ADY normally, you can simply double the amount of yeast and use cake yeast. Or you can use this conversion table http://www.theartisan.net/convert_yeast_two.htm

As Craig noted, the entry for fresh yeast in the dough calculating tools is Cake Yeast (abbreviated as CY). Fresh yeast is called by many other names, including cake yeast, wet yeast and compressed yeast. They are all the same thing.

 Where in Russos did you find that? I'm in there all the time and never saw it. Of course, I never asked about it either.

there are tw doors, one on the left is the one that has the cashiers , the other looks like offices, you ask the open window in the right door to get it for you
