My new Pies.

I used gluten boys recipe

Flour (100%):  762g
Water (61%):  465g
IDY (0.282910%): 2g
Salt (3.42%):  26g (sea salt)

4 16" pizzas 7 day ferment

Cento tomatoes sauce, provolone cheese, and pepperoni slices

I think I'm getting better at manipulating the dough, hope you like it.

Looks great!  What kind of flour did you use?
