« on: November 26, 2012, 12:37:56 PM »
with different pizza makers adding different flours to their mixes to get softer doughs, am i cheating by adding a little oil to tenderize my pies .i know it is not vpn, but i did not see any changes in cooking.times. the dough was a little fluffier when cut. didn't get a taste as i sold out of dough in under one hour. anyone else add oil.i used 1/2 percent of four.

friday night at matus winery, more cheating. i only use .5 percent oil probably not enough to make a difference. oven temp minimum of 800 floor.and 5 hours room temp rise on all of the dough. makes a nice light pie.

I don't think I'd feel cheated if I paid for that. Looks good.

Are you claiming VPN status or anything like that? Using dough made by x would be cheating IMO.

That's ok, I was just playing with some numbers in the dough calculator.

Steve,

For 12", it is [(265/28.35)]/[(3.14159 x 6 x 6)] = 0.0827

For 13", it is [(265/28.35)]/[(3.14159 x 6.5 x 6.5)] = 0.0704

The average is 0.0766.

Yeah, I figured for a 12.5 in pie and rounded down to .075. What's a .001% between friends, right?
