Upon the new year, my wife and I will start the process of creating a mobile wood-fired business. The big concern, among other things, is the trailer. Has anyone out there been involved in the building of one of these? The following things will be installed on the trailer (weights are approximate):
-I'm thinking the Forno Bravo Giardino 70 (I know it's small, but I can still cook 2 pizzas, it has a one piece dome, relatively light, and relatively inexpensive)-450lbs.
-Structure to support oven (fabricated support, concrete slab [do I have to have this, or just a thick sheet of metal?])-??? lbs.
-Two door pizza prep cooler-250 lbs.
-Handwashing station, water-200 lbs.

-Food, gear, wood, stuff-250lbs.
-Generator-60 lbs.
-Have I missed anything?
-Do the weights sound accurate for those that have gone through this process?
-Could I get away with using a single axle utility trailer?
-Most are leaf springs rated at 3500 lbs....is that sufficient?
