There a couple of extremely good pizza joints in Fort Collins, CO called Pulcinella's and Positano's. The two owners used to work together and then split. Their menus are very similar for obvious reasons.
They make a 2-crust pizza that's stuffed with spinach, garlic, black olives (or mushrooms), cheese.. and maybe a light amount of tomato sauce or perhaps none (can't remember exactly). I know the food court chain Sbarro makes something like this too. This is not a Chicago style pie with the sauce on top btw.
Anyway- I'm curious if this is a New York invention.. or did it come from Italy somewhere? Is it regional US besides NY? It's crazy good (if you like a heavier pizza). I'm going to make tonight (but add sausage). I'll try to remember to take couple of pictures.
