Pesto AND tomato sauce together?
« on: December 19, 2012, 01:40:39 PM »
Just curious if anyone has tried a pizza with BOTH pesto and tomato sauce?  I've thought about it, but didn't want to ruin a good pie.

I love the two mixed it gives the pesto a nice acidity.  I dont mix equal parts mostly pesto and a little tom sauce.

Thanks Pabsey.  I've made all pesto pizzas and put sliced tomatoes on top and always thought it tasted good, so I guess if done in the correct proportions this should be good too.  If I did it, I was actually thinking of twice the tomato sauce vs pesto, but I was just basically guessing.

3.14 Guy,

I made pesto to go on an MM pizza at Reply 684 http://www.pizzamaking.com/forum/index.php/topic,3940.msg159722.html#msg159722 and if you are interested the picture of the MM pizza I used the pesto on is at Reply 705 second picture down and the next couple of posts. http://www.pizzamaking.com/forum/index.php/topic,3940.msg159946.html#msg159946  I used pesto swirls on the top in combination with the tomato sauce on the skin first.

Norma, I like that idea.  The pie looks awesome, and delicous!  How was the final taste?  Is it something you'd do again, or was it an experimentation thing?  Did you have any toppings other than the basil i see in the pics?

If the two sauces work well together I wonder why I've never seen it at any commercial restaurants??

Hmmm, I think I may have to try it on tonight's Detroit style square!

Guy,
I believe it may just be that it simply hasn't evolved yet. White pies and pesto pies...people are still being introduced to those in many places. Just a thought...

3.14 Guy,

I thought that pizza was tasty, but everyone has to try something to see if they like those tastes.  I would do it again, but it was just an experiment at the time.  That really wasnít basil under everything, it was spinach.  I do like spinach under cheeses in different style pizzas including a Greek style pizzas and even Detroit style pizzas.

I donít know if you would be interested in pesto with Brussels sprouts, but recently seen this one on Slice.

http://photograzing.seriouseats.com/2012/07/pizza---pesto-with-brussels-sprouts.html?ref=photo_home_25  and the link to the bloggers post.  http://acooksmemoir.blogspot.com/2011/12/home-made-pizza-and-linguineclam-pasta.html That one doesnít have tomato sauce.

If you search pesto pizza on Slice you can see what is posted.

I do it almost every bake.  It's a favorite combo of my family, and everyone I've served it to loves it.  Our local pizza place does it too....  Maybe it's a local thing here?

White sauce, pesto, and red sauce on the same pie, in the configuration of the Italian flag, just something to bake for fun.

WOW!  Not good!!  :(

I should NEVER have tried it on a Detroit style pan pizza. WAYYYYYY too much oil (jarred pesto = lot's of oil).  Combined with the oil in the pan and the result was a completely inedible soggy mess.  There's was no way I could even try a bite.  :-X

I will try it the next time I do a round, which will probably be within a week.  Norma, thanks for the links, I will check them out.  Never had Brussells sprouts before but I'm open to trying anything.

I love doing a pesto, chicken and red onion pie.  Maybe I'll try that combo on the round pie on a screen.

Ugh, the house reeks of oil and pesto now.  Thank God I did the larger pan standard with pepperoni and bacon.

Well ya know Guy, that suspiciously sounds like a line outta the Dangerfield Fine Dining Guide...but I'm gonna take your word on this one. Instead, you can send it to my ex-wife...how bout that friend...why,she's so cheap she'll prolly find a brilliant new use for it, make a fortune and put us all to shame!
No respect I tell ya...jus no respect.... 8)
