You're very lucky to have found a patch of ramps, John.   I just bought out the farmers market here in Atlanta for 19 bucks a pound.  In addition to putting them on pies or sauteing them, I make pakora (basically Indian version of tempura) out of them.  Incredibly delicious.

No hills around here. Not much in the way of well drained soil either. It's all clay.

The equivalent in the UK is Ramsons aka "Wild Garlic".

Other wild alliums around at the moment:  "three cornered leeks", "few flowered leeks" and "crow garlic" (triquetrum, paradoxum, vineale respectively). My favorite is the "few-flowered" leek. Similar taste to a scallion.

I never saw them till last year working with John.  I went for a walk Sunday in hopes of finding them but no luck.   Craig I think the abundance of poblanos in texas would pretty much make up for no ramps.
