glad to be a member. Looking to improve my pizza making. I have made pizzas for a few years. They started quite well, and have turned inconsistent. I tried Versano's Pizza tonight, after purchasing and feeding my first "starter" for poolish. It tasted very good, but was flat and did not rise. I am currently a frustrated pizza maker, whereas i used to be a more successful one. It was probably luck before. I used Alton Brown's recipe, and others from Food Network. The recipes initially worked quite well. Somewhere, along the way, i made subtle changes, and now they don't seem to rise, even with Jeff Versano's recipe. I am hoping for improvements.
