Deep Dish - do I make it like an apple pie ?

Hi Guys,

I made a deep dish pizza last night, and brought my dough up the sides of my pizza pan ( really a cake tin ) all around it, like you would for an apple pie....

is this how it is done  ? or are you supposed to just make the dough fit in the BOTTOM of the pan ? and not have it come up around the sides of the deep dish pan ?

Yes, deep-dish is like a pie.  You press the dough out and then pull it up on the sides.

Chicago style does dough, cheese, toppings and sauce on top.

Thanks for the info, glad to know I somewhat did it ok.

I think that only Chicago deep dish has the sauce go on last though ? Is that what sets it apart from the rest ?

All other deep dish are made in the tradition way .... sauce on bottom ( it goes on first ) .....

Here is a pic of the pan I used, - I put about 1/8" of oil in the pan before putting the dough in, - it resulted in a just beautiful golden brown fried crust, and boy it tasted gooooood  :D

Deep dish is a Chicago creation, but I have seen it in other places made the way you did.

I prefer the 'reverse' method myself.
