I bought some domestic sturgeon caviar for new years eve and opted for a sourdough blini solution. I put the dough together last night and pretty much shot from the hip but was conservative with the starter, I figured I could always speed things up with warmth. Everything worked out great and I made a pretty good batch of blinis, maybe 300 of them. The buckwheat flour gave a funky color, they were almost gold.
We had a throw back theme and partied early so our little boy could enjoy with us.
