I've been eating at Mack & Mancos on OCNJ boardwalk for 35 years (now Manco & Manco). So I just got back from spending New Years Eve 2103 at "first night" in Ocean City and ate several more times at Mancos Sunday and Monday. I got some good info on how they make their dough and cheese and this forum helped me fill in the blanks (because their staff would not divulge details, only subtle clues). So I came home tonight and recreated their pizza and believe I've mastered it!
