Has anyone ever been to Old Chicago?

Their deep dish is more like a pan pizza than classic chicago deep dish. Would anyone know the recipe for their pizza dough and how its prepared? Their dough taste so good. I'm not sure where all they are, but they have 3 arizona locations.

I'll see what I can find out from my neighbor. He used to manage the Old Chicago in Brandon, Fl, until it closed about a year ago.

Old Chicago dough recipe (not sure if this is the same used for the "deep dish")

50 lb bag of flour
25 lb water
3 oz salt
3 oz sugar
3 oz yeast

If there's oil it is in a small amount.  I don't remember if there was any.

Thanks for the recipe, i will definitely try it, but can anyone help me reduce that to a one pound pizza ball?

You might first ask Loo whether all of the ingredients are by weight, and what kind of flour and yeast are used. Then I or someone else can show you how to fulfill your own request.

Anyone have the recipe for Old Chicago?  It's chunky tomatoes if that helps any.
