My family owned a string of parlors in Central California in the 70's. A major component to our sauce recipe was a bag of spices labeled "Norm's Spices." We bought through AlumRock Cheese Company (allegedly a division of the Bonnano Family) until they were bought out by a corporate entity. I'd really like to get my hands on those spices again if they are available anywhere.
