Thanks Craig, I am working on creating a Pita post on my website detailing the process. For pita, any pizza recipe should work, for this trial I used fast rise pizza dough. I bet your pizza recipe will work great. I noticed, pita puffed better and faster when used a roller to stretch the dough. In MPO, it took about 3 to 3 1/2 per pita to bake including browning. In your WFO, probably less than 60 seconds to bake.
